CLASSIC CHICKEN NOODLE SOUP

INGREDIENTS

Season to taste with salt and pepper, then stir in the parsley. Serve topped with Parmesan.

Chicken

Eureka whole chicken large size
Quater cup olive oil
3 large carrots, sliced
Salt and black pepper
8 cups chicken broth
4 to 5 cups coarsely shredded chicken
Parmesan, for serving
1 large onion, chopped
4 stalks celery, chopped
3 cloves garlic, chopped
8 ounces egg noodles
Half cup chopped fresh parsley

Method

  1. Heat the olive oil until shimmering over medium heat in a large soup pot. Add the onion, carrots, celery, and 1 teaspoon each salt and pepper
  2. Cooking, stirring frequently, until the vegetables are very soft, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute
  3. Add the stock and bring to a boil
  4. . Add the noodles and cook 6 minutes, then add the chicken and cook about 2 minutes more, until the noodles are cooked through and the chicken is warmed through
  5. Season to taste with salt and pepper, then stir in the parsley.
  6. Serve topped with Parmesan
