SCRAMBLED EGGS WITH EUREKA VIENNA SAUSAGE

Eureka Chicken Vienna

A pack of Eureka chicken vienna sausages
4 large eggs
Half cup(s) water or milk
2-3 cloves of garlic, sliced
1 teaspoon(s) scotch bonnet pepper finely chopped
Quater cup(s) green sweet pepper diced
Quater teaspoon(s) Grace Caribbean Traditions Black Pepper
4 Eureka Vienna Sausage
Quater cup(s) red sweet pepper diced (optional)
Quater cup(s) chopped escallion
1 small onion chopped
Half teaspoon(s) salt
2 tablespoon(s) Grace Margarine

Method

  1. Whisk eggs lightly, cut Eureka Chicken Vienna Sausages into small pieces and add to the whisked eggs.
  2. Add water, sweet peppers, scallion, scotch bonnet pepper, onion, salt and black pepper and mix well.
  3. Heat sauté pan, add Margarine and allow to melt.
  4. Pour in the egg mixture and stir frequently until the mixture sets.
